Easy 1/2 Million Dollar Dip

I can count on two things when my daughter gets out of school. First, she’s going to tell me every single detail about her day. This girl has definitely got the gift of gab! Second, she is going to be famished. Even though she packs a lunch fit for a mountain climber, after all of the 4th grade adventures she goes through during the day, by the time she gets home she can’t wait for dinner time.
Last year, I would have her get crackers or a piece of fruit to hold her over, but Ayva is bigger now. Her homework is more difficult (and there’s more of it). Even her backpack is heavier! A piece of fruit is just not enough for this growing girl. We like to wait for my husband to get home before we eat, so that means she has to wait 3 – 4 hours after school until dinner. While I don’t want her to spoil her appetite, I also don’t want her little stomach to be rumbling.
A couple of weeks ago, inspiration hit me. What’s an easy snack that I can make in just a few minutes that would be protein-filled and not super heavy? Dips! I always think of dips for parties and other get-togethers, but when you think about it, they’re perfect for kids to snack on after school, too. Because dips are so simple to make, I can usually pull one together with whatever I happen to have in the house. Veggies, some kind of protein, cheese, and a carrier like mayo or oil and we’re good to go.
One of my favorite dips has always been million dollar dip. It only has five ingredients: mayonnaise, bacon, green onions, cheese, and almonds. The best part is that it can be made in five minutes. Because my daughter is a little particular when it comes to food, I made it even simpler. Instead of bacon, I used real turkey bacon bits. I also eliminated the almonds. I guess you can call this a $500,000 Dip! Ha!
The one thing I didn’t switch out was the mayo. I used Best Foods Real Mayonnaise. Depending on where you live, it might be called Hellmann’s. It’s America’s #1 mayonnaise because it’s made simply with eggs, oil and vinegar. That’s it. Hellmann’s® Real products are made with cage-free eggs, and is rich in Omega 3-ALA. What does all that mean? Well, it’s perfect for a growing girl’s after school snack!
Tip: From 8/29/18 -9/12/18: Save on the 20oz. squeeze bottle of Hellmann’s or Best Foods Mayonnaise at your local Kroger!
Here’s how to make it. Keep in mind that this recipe is a smaller serving, not a party size. You can double the recipe if you’d like to make it for a larger get-together.
